(or, as I fondly call them, "Meatloaf Muffins"!)
*This recipe is from the Kraft Food & Family magazine. We had these for supper last night and they were quick and easy to make, but tasted yummy!
Take 1 lb. extra lean group beef, 1 pkg. (6 oz.) Stove Top Stuffing Mix,
and 1 cup water and mix and match with the following options:
Italian~ 1 tsp. Italian seasoning, 3/4 c. spaghetti sauce, 3/4 c. shredded mozzarella cheese
Fiesta~ 2 tsp. chili powder, 3/4 c. salsa, 3/4 c. shredded Mexican-style cheese
Mediterranean~ 1 tsp. dried oregano leaves, 3/4 c. chopped roasted red peppers, 3/4 c. crumbled feta cheese
BBQ~ 1 tsp. garlic powder, 3/4 c. barbeque sauce, 3/4 c. shredded cheddar cheese
1. Preheat oven to 375 degrees. Mix meat, stuffing mix, water and seasoning until well-blended. Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation in center of each with back of spoon.
2. Spoon the sauce into indentations.
3. Bake 30 min. or until meatloaves are cooked through. Top evenly with cheese, continue baking 5 min. or until cheese is melted. Let stand 10 min. before serving.
We had the Italian-style.
I'm looking forward to trying some of the other varieties as well.
These were so simple~ kids could easily make these.
