Summer Salads

I love salads!  Whether it be a grilled chicken salad, strawberry spinach salad, macaroni salad – just any salad – I love them.  I thought that, with the 4th of July holiday coming up and lots of people picnicking this weekend, it would be a fun time to share some favorite salad recipes.

Here’s a tried and true salad that we’ve been making for several years now.  We love it and it always gets eaten up at summer get-togethers.

summer 015 Sweet and Tangy Broccoli Slaw

Ingredients:
1 (12-ounce) package broccoli slaw
2 (3-ounce) packages beef-flavored Ramen noodles
¼ cup sunflower seeds
½ cup oil
½ cup vinegar
½ cup sugar

Directions:
Place broccoli slaw in bowl. Crush both packs of Ramen noodles and add to slaw (Noodles only, no flavor packets). Add sunflower seeds.

Whisk together the oil, vinegar, sugar, and one flavor packet from the noodles. Pour over other ingredients and mix well.

Note: This salad is best made the day before. We’ve found that it actually gets more moist and yummy the longer it sits.

And here’s one that I just found on the Food Network website when I was searching for a salad to make with couscous.  I changed it up a bit – so here’s my variation.

summer 082 Confetti Couscous Salad

Ingredients:
1 box Near East Couscous Mix (roasted garlic & olive oil flavor), prepared
I can chickpeas, drained
red pepper, chopped, according to taste (I used a full pepper)
vidalia onion, chopped, according to taste (I used 1/2 a smaller Vidalia)
cucumber, chopped, according to taste (I used about 1/2 a medium-sized cuce from Brian’s garden)
tomato, chopped, according to taste (I used a whole large tomato)
fresh parsley leaves, chopped, to taste (about 1/8- 1/4 cup)
5 oz. container crumbled feta cheese
salt & pepper
1/4 c. olive oil
1/4 c. red wine vinegar

Directions:
Place all ingredients in large bowl.  Toss to coat. 

Note: I made this one today, for a picnic we’re attending tomorrow.  Not sure if that was wise or not – I’ll tell you later. :)

we just tried this one and I love it! a(normally I am not a fan of curry, but this is soooo good!)
chicken curry salad
Ingredients:
1 lb. cooked chicken breast, cut into bit size pieces
1 1/2 c. chopped celery
1/2 c. cooked orzo pasta
1/2 c. shelled pine nuts
1/2 c. dried currants, cherries, or cranberries
3/4 c. finely chopped scallions
1 Tbsp. curry powder (or more to taste)
mayonnaise
salt and pepper to taste

Throw all ingredients into a large bowl and mix. Add mayonnaise a little at a time, mixing until all ingredients are incorporated. It should have the consistency of a salad/sandwich spread. You can use two kinds of curry powder - regular, and Madras, which has more of a kick. I used regular and then some cayenne because I didn't have Madras curry powder. I also used slivered almonds instead of pine nuts because I couldn't find a good deal on pine nuts! This is best when chilled, and good on a sandwich!

that first salad is also very good w/ bok choy. (instead of the broccoli.)
