Yumminess (aka Hashbrown Casserole)

On Saturday afternoon, Ashley and I were trying to brainstorm something good for supper.  (Yes, it’s been awhile since we’ve made a menu – need to get back into that habit.  But, we never really planned our weekend meals anyway.)  She was hungry for burgers, so we decided to make bacon cheeseburgers.  But, what to go with them? 

She ran to see if we had any fries in the freezer – we didn’t.  I didn’t feel like maybe homemade fries.  She did find a bag of shredded hashbrowns.  So, we  decided to create our own version of a hashbrown casserole – because, around here, you can never quite find all the ingredients you need for a “real” recipe.  It turned out to be about the best hashbrown casserole we’ve ever had.  So, in order to remember how to make it next time, I had to get it into writing - - -

Chop up a small onion and place in frying pan with 1 tablespoon of butter.  Saute until soft (but not browned). 

In a separate pan, prepare bacon.  (We used about 1/2 a pound.  I slice it while it’s still semi-frozen into about 1/2 inch strips, so it becomes like bacon bits.) 

Add 1 can cream of chicken soup, 1 container cream cheese with chives, and some milk to the onion and butter (I’m a mix and dump girl – just throw some in – I’m thinking about 1/2 a cup).  Stir together over low-medium heat until melted and well-blended. 

Meanwhile, spray a 9x13” baking pan with cooking spray.  Put the shredded hashbrowns in the pan.  (We used the whole bag.)  Add the creamy mixture and about 2/3 – 3/4 of a package of shredded cheddar cheese (you’ll need to rest for later); stir all together. 

Place in a 350 degree oven for awhile – hmmm. . . . about 30 minutes. 

Top with bacon pieces and the remainder of the cheese and place back in the oven until the top is nicely browned (or however you like your cheese topping).  I like my hashbrown casserole to get kinda brown and crispy around the edges (that’s my favorite part!) 

ENJOY!  And if you’re lucky, you’ll have leftovers!  I know, I should have taken a picture, but I was too busy enjoying the yumminess!

This is very similar to the recipe I use and my son loves it. I have never added bacon though (which would make him love it more)! And the flavored cream cheese instead of sour cream sounds really good!

It makes me smile when you share all the things you and Ashley do together! You are blessed and she is too!

Oh goodness, there's nothing like a hashbrown casserole. I might have to make one now.
