Cherry Coffeecake

This particular cookbook has not only lost its  cover, but this title page is no longer attached either.  As you can see, the pages are curled and discolored around the edges.  The inner pages are stained with spills from various ingedients, etc. 

When I see a cookbook like this one, I know there must be yummy recipes inside!  This particular cookbook was one that was made up by the school I attended.

The other evening, I got hungry for something containing cherries.  I knew we had some cherry pie filling in the pantry, and I remember this old coffee cake recipe that my mom used to make.  So, I dug out this cookbook and here is the result:

INGREDIENTS:
3/4 c. butter
1 1/2 c. sugar
3 eggs
1/2 tsp. vanilla
1 1/2 tsp. baking soda
8 oz. sour cream
1 20oz. can cherry pie filling
3 c. flour

STREUSEL TOPPING:
1/2 c. flour
1/2 tsp. cinnamon
1/4 c. brown sugar
1/4 c. butter

DIRECTIONS:
Preheat oven to 375.  Grease 2 9” round cake pans. Cream butter and sugar. Beat in eggs until mixture is light and fluffy.  Add vanilla. Combine flour and soda. Add to creamed mixture alternately with sour cream. Divide batter evenly in pans and spread with pie filling on top.  (Streusel topping: combine flour, brown sugar, and cinnamon, then cut in butter until crumbly). Sprinkle streusel topping over cherry pie filling.  Bake for 25-35 minutes.
