Our Favorite Broccoli Slaw

During the warm summer months, I love salads.  All salads – from garden salads to pasta salads, from potato salad to cole slaw. Yep, I pretty much love them all.

We are preparing for a family picnic tomorrow, and one of my all-time favorite salads to prepare is one made from broccoli slaw.  I thought it would be fun to share the recipe with you.  (I’m actually sharing the doubled version, which is what you’ll want to make for a large picnic or potluck – 1/2 this recipe would be more suitable for a family or small gathering.)

Ingredients:

  • 2 pkg. broccoli slaw
  • 4 pkg. beef-flavored Ramen noodles
  • 1/2 c. sunflower seeds
  • 1 c. oil
  • 1 c. vinegar
  • 1 c. sugar

003

Directions:

Place broccoli slaw in large bowl.

Crush Ramen noodles and add to broccoli slaw in bowl (set flavoring packets aside).

004

Add sunflower seeds.

005

Combine dressing ingredients – oil, vinegar, sugar, and 2 of the flavoring packets.  Stir (or shake) ‘til well-mixed.

006

Pour dressing over other ingredients and stir until coated.

007

Refrigerate for several hours before serving (I like to make mine up the day before).

Just a warning – if you want some just for you, you better take some out and set it aside before going to your picnic.  Otherwise, you’ll likely come home with an empty bowl!

my mom makes this too and I LOVE it!!! Your dressing is a bit different, so I think I'll try this one soon! :)

I think I love it because it's different! Some people make what's called Asian Slaw - and I think it has chicken in it too. Ours is very simple - but it looks so pretty and colorful when it's made up and I think the dressing is yummy! Let me know if you try it and how it compares to your mom's recipe.

Heidi,
This look AMAZING!!! I am not usually a fan of cole slaw because of the mayonnaise based dressing....will try it soon! Thanks for sharing!

Yes, this is more of a "sweet & sour" type dressing. I hope you like it!
Just make 1/2 the recipe to try. :)
