Savvy Slow-Cookin’ ~ Chicken Cacciatore

It’s been a whole month since our first ever Savvy Slow Cookin’ link-up.  The weather has been getting much cooler around here and I’ve been putting my Crock-Pot® to good use.  How about you?

Last month, I shared my recipe for Crock-Pot® Lasagna.  We had a total of 15 recipe link-upsDid you try any of the new recipes that were shared? 

This month, I’m going to share a quick and easy recipe for Chicken Cacciatore.  This recipe originated in a free cookbook for busy moms that was put out by Ragu.  I’m a mix and dump type cook, so I’m going to list the recipe as I make it:

INGREDIENTS:

  • Boneless, skinless chicken breasts (we buy ours in bulk and freeze them – 2 split breasts in a baggie)
  • Green peppers, sliced
  • Onions, sliced
  • A jar of spaghetti sauce (obviously, the original recipe calls for Ragu, and I just happened to have some on hand, thanks to a coupon)
  • Seasoning (I have no clue why, but I like Lemon Pepper in this one!)
  • Egg noodles, pasta, or rice (most of my family refuses to eat rice, so we always use egg noodles in this recipe)

DIRECTIONS:

Place your chicken breasts in the bottom of your crock pot and top with the pepper and onion slices.  Add your desired seasonings.

Top with sauce.

Cook on low for about 6 hours. 

When ready to eat, prepare egg noodles.  Remove chicken from crock pot and shred

Top egg noodles with chicken cacciatore mixture.  Or, if you’re like me, just dump your noodles into the Crock-Pot® and mix altogether.
